i believe it is trial and error that will get you there, but first u will need to know what a good shot is pulled and tastes like, aim for that and practice.
get a normal bathroom weighing scale, practice until you can tamp with fairly similar amount of pressure, its actually pretty simple.
this will leave you with grinding fineness and amount of dosage (with the first one by slowly adjusting the grinder and the latter easily controllable with a kitchen scale)

search around the forum and you'll easily find one of those youtube links to a well-pulled shot video clip.
well tasted espresso, well actually i think its up to personal preference, but if you're desperate then perhaps pay landy and shing a visit im sure they can show you what a nice shot should taste like?
