1. I think a basket is a kind of "cooking tool" for coffee. You can control the taste of the brewed coffee using a basket. As different baskets have different capacity and the design of the shapes and holes of the filter are different, you can get different tastes of the same coffee beans by using different baskets. As you can have the option of changing baskets, you'll have a lot more fun making coffee! Therefore, in my own opinion, whether or not to use a double basket for espresso is more a question of the whether the actual machine-portafilter-basket combination can deliver the kind of taste of espresso you want, and whether such a basket can bring out the great taste of the coffee beans you use. For me, I use double basket and sometimes tripple, depending on the beans I use.
2. Not necessarily, though 16g is a good starting point. You may use more, or use less.
3. Yes, possible, if your recipe calls for it.
4. Yes, as mentioned in my answer to 1.
5. No need, especially if you use it daily. But if you use your machine only once a while, it's not at all a bad idea to back flush it after each use.
6. Yes and no. You may use specially cleaning agents, but not every time you do a back flush. I do a back flush every other day without cleaning agenets, and once a month with cleaning agents.
7. I guess you're using a two-hole steam wand tip, which is good but needs more practice if you go from a one-hole machine.
8. If really depends on the water you use.
9. Better leave this part to machine maintenance professionals. If you use a wrong cleaning agent, you may spoil the entire boiler.
10. Do you mean water filter? If yes, I think that's a very important element that I would highly recommend you use one if you have not already had one. Usually a good quality water filter costs a lot more than $1000. The one I use is a three-column water filter.
11. If you're speaking of cleaning the exterior of the coffee machine, you just need water, or more precisely hot water. Instead of getting a good cleaning agent as stated in your quesetion, a good quality piece of cloth specially made for cleaning stainless steel may be what you need. |

Hi Simon,
Thx a lot for sharing. Is ion exchange resins necessary for Hong Kong water, I recall from the old science textbook saying the water in Hong Kong is soft. The filter claims that it can remove 99.99% of bacteria. I wonder with routine renewal of filter media, would the quality of water from filter comparable with boiled water (is it really drinkable without boiling)? Or it is just my wishful thinking, indeed another reason for having this filter is to save space of water bottle. I may not consider RO since it is too big and I don't like the taste of RO water.
Are you suggesting to boil the filtered water before add to the coffee machine to ensure the softness and bacteria fee?
I may not plumb the machine directly to the filter initially and I will observe the water quality before decide on it.
