my coffee tends to be sour in taste, it's good sour but it's just more intense than usual. i'm facing this dilemma between temperature and flavor.
to reduce sourness , i have to raise the temp a little. w/out a PID w/ my classic, i can only coarse it up a little and raise the beverage temp. but when it's coarsened up the flavor becomes light and pale. i can take a balance between sourness and flavor but i can never get perfect result from both ends. Is it the limitation i get from a PID-less machine ? or is there any tricks i can do to make something happen ?
